Squeeze half a lemon over the fillets, then let them rest at room temperature for 10–15 minutes while you prepare the coating (this helps the seasoning adhere).

    Mix dry coating

    In a shallow bowl or pie plate combine 1 cup all-purpose flour, 1/4 cup cornstarch, 1/4 cup cornmeal (if using), 1/2 tsp baking powder, 1 tsp Old Bay (or seafood seasoning), 1/2 tsp black pepper, and 1/4 tsp kosher salt (adjust to taste). Whisk to fully blend and break up any lumps.

    Prepare wet batter

    In a second shallow bowl whisk together 1 large egg, 1/2 cup milk or buttermilk, and 1 tsp hot sauce (if using) until smooth. This thin egg wash helps the dry coating adhere without a heavy batter.

Breading & Resting

    Set up a breading station: seasoned fillets, wet bowl, dry bowl. Working one at a time, dip a fillet into the wet mixture, letting excess drip off, then press into the dry mixture to coat both sides evenly. Shake off any excess and place the breaded fillets on a wire rack set over a baking sheet. Let them rest 5–10 minutes—this helps the coating set and reduces loss while frying.

Frying

    Heat oil

    Pour about 1 cup (or enough for a 1/4–1/2 inch depth) of neutral oil into a large skillet (10–12 inch) and heat over medium-high. Use a thermometer if available: target oil temperature is 350–365°F (175–185°C). If you don't have a thermometer, test by dropping a pinch of the dry mix—if it sizzles immediately and browns slowly, the oil is ready.

    Fry fillets

    Carefully place fillets into the hot oil in a single layer without crowding (work in batches if necessary). Fry 2–4 minutes per side depending on thickness until golden brown and cooked through (internal temperature 145°F/63°C or flesh flakes easily). Adjust heat to maintain 350–365°F; reduce if coating browns too quickly.

    Transfer cooked fillets to a plate or sheet lined with paper towels or to a wire rack to drain for a minute. If using multiple batches, keep finished fillets on a warm oven (200°F/95°C) to hold while you finish frying the rest.
