    Prep fillets

    Pat tilapia fillets dry with paper towels. Season both sides evenly with 1 1/2 tsp of the kosher salt and the 1 tsp black pepper and the lemon zest; set aside.

    Set up dredging or baking

    For fried version: place flour in a shallow dish and whisk. In a second shallow dish beat eggs with 2 tablespoons milk. For a crisp alternative (baked): mix the flour with the cornmeal/panko in a shallow dish and add a pinch of salt.

    Dredge fillets

    Fried: dredge each fillet in flour, tapping off excess, dip in egg mixture, then return to flour for a light final coating. Baked: press fillets into the flour–cornmeal/panko mixture so they are evenly coated; spray or brush lightly with neutral oil.

    Fry or bake

    Fry: heat 1/2 cup neutral oil and 1 tbs butter in a large skillet over medium-high heat until shimmering (about 350°F if using a thermometer). Add fillets in a single layer and cook 3–4 minutes per side until golden brown and opaque through the center (internal temp 145°F). Work in batches if needed. Transfer to a wire rack lined baking sheet to drain. Baked: preheat oven to 425°F (220°C). Place coated fillets on a parchment-lined baking sheet, brush tops with remaining oil and dot with remaining 1 tbs butter. Bake 10–12 minutes until crust is golden and fish flakes easily.

    Keep warm

    Keep cooked fillets warm on a low oven rack (200°F/95°C) while you finish the sauce. Do not cover with foil tightly — a loose tent is fine.

Lemon Caper Cream Sauce

    Mince shallot and finely chop garlic. Measure other sauce ingredients so they are ready.

    In a medium skillet over medium heat, melt 2 tbs butter with 1 tbs olive oil. Add the shallot and cook, stirring, 2–3 minutes until softened and translucent but not browned. Add the minced garlic and cook 30 seconds until fragrant.

    Deglaze the pan with 1/4 cup dry white wine (or 1/4 cup stock). Use a wooden spoon to scrape any browned bits from the bottom and simmer until the liquid reduces by about half (about 1–2 minutes).

    Add the chicken/vegetable stock (1/4 cup), lemon juice (3 tbs), and capers (2 tbs). Bring to a gentle simmer and cook 1–2 minutes to blend flavors.

    Reduce heat to low and stir in 3/4 cup heavy cream and 1 tsp Dijon mustard if using. Simmer gently for 2–3 minutes until the sauce begins to thicken enough to coat the back of a spoon. Do not boil vigorously to avoid breaking the cream.

    Taste and season with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper. Stir in 1 tbs chopped parsley and the lemon zest reserved from the fish prep. If sauce is too thin, simmer 1–2 more minutes; if too thick, thin with up to 1–2 tbs additional stock.

    Finish sauce by whisking in 1 tbs cold unsalted butter off the heat for sheen and to round the flavor.

Plating & Garnish

    Place a warm tilapia fillet on each plate or buffet tray portion. Spoon 2–3 tbs of the lemon caper cream sauce over each fillet or arrange sauce alongside for guests to serve themselves.
