Make honey syrup & dissolve sugars

Prepare syrup
Combine the honey, brown sugar and 100 ml water in a small saucepan. Warm gently over low heat, stirring until the honey and sugar fully dissolve and the syrup is homogenous. Do not boil. Remove from heat and allow to cool to room temperature (about 20–30 minutes).

Steep the mixture at room temperature for 3–7 days, tasting once per day after day 2. The flavor should develop honeyed, floral and light citrus notes without becoming overly spicy. For a more pronounced botanical/heather character, steep up to 10 days, but taste frequently.
Marry infusion and finish

Strain the infused whisky
After the desired infusion time, strain the whisky through a fine-mesh sieve lined with several layers of cheesecloth or a coffee filter into a clean jug to remove solids. Press gently on the solids to recover the spirit, but avoid forcing bitter residues through the cloth.

Blend with honey syrup & brandy
Stir the cooled honey-brown sugar syrup into the strained whisky. Add the optional 50 ml brandy if using — this deepens body and helps preserve the liqueur. Taste and adjust: if the liqueur is too sweet, add up to 25–50 ml additional whisky; if too weak in honey/flavor, add small amounts of syrup or a touch more honey dissolved in warm water.

Optional ABV adjustment
If you want to raise the alcohol content or stabilize the liqueur, add small amounts of neutral spirit or high-proof vodka, up to 25–50 ml, blending and tasting until satisfied. (This step is optional — traditional Drambuie sits around 40% ABV depending on the whisky used.)

Rest and clarify
Transfer the finished liqueur to a clean bottle or jar, seal, and let rest for 1–2 weeks in a cool dark place to allow flavors to marry and any remaining sediment to settle. For clearer liqueur, cold-filter through coffee filters or chill and decant off the clear liquid.

Store sealed in the refrigerator or a cool dark cupboard. Serve neat over ice, as a component in cocktails (e.g., Rusty Nail), or drizzle over desserts. Shake or stir before pouring if any separation is visible.
