Special P.H. Fries

Prep potatoes
Wash and peel the russet potatoes. Cut them into 1/4- to 1/3-inch sticks for classic fries. As you cut, place them in a large bowl of cold water to remove surface starch and prevent discoloration.

Soak
Soak the cut potatoes in cold water for at least 30 minutes (up to 2 hours) to draw out more starch for crisper fries. If short on time, 15 minutes helps.

Dry thoroughly
Drain the potatoes and spread them on clean kitchen towels or paper towels. Pat completely dry—moisture will cause oil splatter and soggy fries.

Heat oil
In a heavy-bottomed pot or deep skillet, pour enough vegetable oil to reach about 1 to 1.5 inches deep (roughly 1 cup for a medium pan). Heat over medium-high until it reaches 325°F (160°C) for the first blanch. If you don't have a thermometer, test by dropping one fry: it should sizzle gently and float.

First fry (blanch)
Working in batches to avoid crowding, add fries to the oil and cook 3–4 minutes until they’re pale and slightly softened but not browned. Remove with a slotted spoon to a wire rack or paper towel-lined tray. Let them rest 5 minutes.

Second fry (crisp)
Increase the oil temperature to 375°F (190°C). When hot, return the fries in batches and fry 2–3 minutes until golden brown and crisp. Remove to a rack or paper towels to drain.

Season
While still hot, toss fries in a large bowl with kosher salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Taste and adjust seasoning.

Finish (optional)
If using, sprinkle grated Parmesan and chopped parsley over the fries and gently toss to combine. Serve immediately hot alongside the hot dogs with special sauce for dipping.

Cook hot dogs
There are three common methods—grill, pan-sear, or simmer then sear. For pan-searing: heat 1 tablespoon vegetable oil in a skillet over medium-high. Score each hot dog lightly (1–2 shallow diagonal slashes) so they don't split. Add hot dogs and cook, turning occasionally, until browned all over, about 5–7 minutes. For grilling: cook over medium heat until charred marks appear, 6–8 minutes. For boiling then searing: simmer in water 4–5 minutes then sear in the skillet 1–2 minutes per side.

Serve
Serve hot dogs immediately with Special P.H. Fries and Special Sauce on the side for dipping or drizzling.

Combine mayonnaise, ketchup, yellow mustard, Worcestershire sauce, hot sauce, lemon juice, and salt in a small bowl. Whisk until smooth and refrigerate at least 10 minutes to let flavors meld. Taste and adjust seasoning—add more hot sauce for heat or more lemon for brightness. Serve alongside fries and hot dogs.
