Hot Chocolate Base

Method

Hot Chocolate Base

  1. 1

    Prep dry mix

In a small bowl, whisk together the unsweetened cocoa powder, granulated sugar, and a pinch of salt until uniform. This helps prevent clumps when added to milk.

  2. 2

    Warm dairy

In a medium saucepan over medium-low heat, combine the whole milk and heavy cream. Warm gently, stirring occasionally, until the mixture is steaming and small bubbles form around the edge (do not boil). This should take about 4–6 minutes.

  3. 3

    Incorporate cocoa

Whisk about 1–2 tablespoons of the warmed milk into the cocoa-sugar mixture to make a smooth paste. Then pour that paste back into the saucepan with the remaining milk and cream, whisking vigorously to fully combine and remove lumps.

  4. 4

    Melt chocolate

Add the finely chopped semisweet/dark chocolate to the saucepan. Continue to heat over low to medium-low heat, stirring constantly, until the chocolate is fully melted and the mixture is smooth and slightly thickened, about 2–3 minutes.

  5. 5

    Finish base

Remove the saucepan from the heat. Stir in the vanilla extract and taste; adjust sweetness if needed by adding up to 1 additional teaspoon sugar. Keep covered and warm while you prepare cups and garnishes.

Adult Flavorings & Toppings

  1. 6

    Pour and spike

Divide the hot chocolate evenly between two heatproof mugs (about 1 cup each). To each mug, add 1 tablespoon coffee liqueur. If using a spirit like dark rum or bourbon, add 1/2 ounce to one or both mugs as desired. For a citrus note, stir in 1/2 teaspoon orange liqueur or a pinch of orange zest into the mug.

  2. 7

    Top and garnish

Crown each mug with a generous dollop of whipped cream (about 2 tablespoons each). Scatter mini marshmallows on top if desired. Finish with a light dusting of chocolate shavings or cocoa powder and a small pinch of orange zest if using.

  3. 8

    Serve

Serve immediately while hot. Offer extra liqueur on the side for guests who want a stronger drink, and caution that the beverage is for adults only.
