Panna Cotta

Macarated Strawberries

Method

Panna Cotta Preparation

1

Prepare Gelatin

In a small bowl, sprinkle gelatin over water and let it sit for about 5 minutes until it blooms.

2

Heat Cream Mixture

In a saucepan, combine heavy cream, sugar, and vanilla extract. Heat over medium heat until just simmering.

3

Combine Gelatin and Cream

Remove from heat and stir in the bloomed gelatin until fully dissolved. Mix in the salted creme fraiche until smooth.

4

Chill

Pour the mixture into serving cups and refrigerate for at least 4 hours or until set.

Macarating Strawberries

5

Prepare Strawberries

Hull and slice the strawberries, then combine them in a bowl with sugar and lemon juice.

6

Macarate

Let the strawberries sit for at least 30 minutes, allowing the flavors to meld and juices to release.

Shave Ice Assembly

7

Make Shave Ice

Using a shave ice machine or ice shaver, shave the ice until it is fluffy and light.

8

Mix Juices

In a separate bowl, mix yuzu juice and guava juice together.

9

Assemble Dessert

Place the shaved ice in a bowl, drizzle the yuzu-guava mixture over the top, and finish with macerated strawberries, toasted coconut, nata de coco, and garnish with makrut lime leaves.
