Craquelin Preparation

Make the Craquelin

In a bowl, mix the flour, brown sugar, softened butter, and salt until crumbly. Roll out between parchment paper and freeze until firm. Cut into circles.

Profiterole Preparation

Prepare the Profiteroles

In a saucepan, combine water, butter, and salt; bring to a boil. Add flour and stir until dough forms. Remove from heat, cool slightly, then add eggs one at a time, mixing well. Pipe onto a baking sheet, top with frozen craquelin, and bake at 400°F (200°C) for 20 minutes.

Make the Pastry Cream

Heat milk in a saucepan until just boiling. Whisk egg yolks, sugar, and cornstarch in another bowl. Gradually add hot milk to yolk mixture, then return to heat and cook until thickened. Stir in vanilla and Hennessey. Cool.

Coconut Tapioca Preparation

Cook the Tapioca

Soak tapioca pearls in water for 30 minutes. Drain, then cook in coconut milk and sugar until pearls are translucent. Cool.

Caramelized Apple Banana Preparation

Caramelize the Fruits

In a skillet, melt butter, add diced apple and sliced banana. Sprinkle brown sugar and cook until caramelized, about 5-7 minutes.

Assembly

Assemble the Dish

Fill each profiterole with Hennessey pastry cream, top with coconut tapioca, and finish with caramelized apple banana.
