Preparation of Filling

Cook Long Rice

Soak the long rice in warm water for 30 minutes, then drain and set aside.

Mix Filling Ingredients

In a large bowl, combine the ground pork, soaked long rice, chopped woodear mushrooms, minced garlic, soy sauce, and black pepper. Mix well.

Tomato Sauce

Prepare Tomato Sauce

In a saucepan, combine the tomato sauce, sesame oil, sugar, and salt. Heat over medium heat until warmed through. Set aside.

Stuffing and Cooking

Prepare Tomatoes

Cut the tops off the Hauula tomatoes and carefully scoop out the insides, creating a hollow space for stuffing.

Stuff Tomatoes

Fill each hollowed tomato with the pork mixture, pressing down gently to pack it in.

Bake Stuffed Tomatoes

Place the stuffed tomatoes in a baking dish and pour half of the prepared tomato sauce over them. Bake in a preheated oven at 180°C (350°F) for 25-30 minutes.

Serving

Plate and Garnish

Remove the tomatoes from the oven, and drizzle the remaining sauce over them. Garnish with chopped scallions, fried shallots, and watercress stems before serving.
