Preparation

Prepare the Wakame

Soak the dried wakame in water for about 10 minutes until rehydrated. Drain and set aside.

Prepare the Nairagi

Lightly sear the Nairagi on a grill or in a pan for 1-2 minutes on each side, keeping it rare in the center. Remove from heat and let it rest.

Make the Finadene Sauce

In a bowl, mix together the soy sauce, lemon juice, ginger oil, and finely chopped onion. Add the grated ginger and stir well.

Slice the Avocado and Fish

Slice the avocado in half, remove the pit, and scoop out the flesh. Cut into thin slices. Slice the seared Nairagi into thin sashimi-style pieces.

Assembly

Plate the Dish

On a serving plate, arrange the wakame, avocado slices, and Nairagi slices. Drizzle the Finadene sauce generously over the top.

Serve immediately with additional Finadene sauce on the side for dipping, if desired.
