Preparing the Pork Patty

Mix the Ingredients

In a large bowl, combine ground pork, chopped lemongrass, fish sauce, minced garlic, sugar, and black pepper. Mix until well combined.

Form Patties

Take a portion of the pork mixture and shape it into a patty. Wrap each patty with a betel leaf, sealing it well.

Cooking the Patties

Grill the Patties

Preheat a grill to medium heat. Grill the betel leaf wrapped pork patties for about 5-7 minutes on each side, or until fully cooked.

Making the Banh Mi Butter

Combine Ingredients

In a small bowl, mix softened butter, fish sauce, minced garlic, and mayonnaise until smooth.

Preparing the Nuoc Cham Tofu

Marinate the Tofu

In a bowl, whisk together fish sauce, lime juice, sugar, and water. Cut the aburaage tofu into slices and marinate in the mixture for at least 15 minutes.

Assemble the Dish

On a serving plate, place the grilled pork patty, a few slices of marinated aburaage tofu, cucumber, jalapeno, and a handful of fresh herbs. Serve with shrimp chips on the side.
