Prepare the Salad
In a large mixing bowl, combine shredded green papaya, halved cherry tomatoes, mung bean sprouts, chopped Medjool dates, crispy mung beans, sliced shallots, minced garlic, and chopped preserved lemon. Toss gently to mix all the ingredients.
Make the Dressing

In a separate bowl, whisk together the fermented tea leaves, lime juice, fish sauce, sesame oil, chili flakes, and sugar until well combined. Adjust seasoning to taste.
