Preparation of filling
Cook the filling
In a large skillet over medium heat, add the ground pork (or mixed vegetables) and cook until browned. Add the shredded carrots, cabbage, minced garlic, soy sauce, sesame oil, salt, and pepper. Stir-fry until the vegetables are tender, about 5-7 minutes. Remove from heat and let cool.

Wrap the spring rolls
Take a spring roll wrapper and lay it on a clean, flat surface. Place about 2 tablespoons of the filling near one edge of the wrapper. Fold in the sides and roll tightly from the edge with the filling. Seal the edge with a little water. Repeat with the remaining wrappers and filling.

Fry the spring rolls
In a large pot or deep-fryer, heat the vegetable oil to 350°F (175°C). Carefully add the spring rolls in batches and fry until golden brown and crispy, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.
