Method

Preparation of grape leaves

    Drain jarred grape leaves in a colander. Rinse under cool running water to remove excess brine. Gently separate leaves and trim tough stems. If leaves are very large, cut away any overly thick vein near the stem.

    Blanch fresh or very salty leaves (if using) in boiling water for 30–45 seconds, then plunge into ice water. Drain and pat dry. Stack leaves with the shiny side down for easier rolling.

Prepare the filling

    Sauté aromatics

    Heat 2 tbsp olive oil in a medium skillet over medium heat. Add the finely minced onion and a pinch of salt. Sauté, stirring occasionally, until the onion is translucent and soft, about 6–8 minutes. Do not brown.

    Combine rice and seasonings

    Add the rinsed rice to the skillet with the onion and stir to coat the grains in oil for 1–2 minutes. Stir in the tomato paste and mix until evenly distributed. Add the ground allspice, cinnamon, 1 tsp salt, and 1/2 tsp black pepper and stir to combine.

    Add liquid and cook partially

    Pour 1 cup warm water (or vegetable broth) into the skillet, bring to a gentle simmer, then reduce heat to low, cover, and cook for 8–10 minutes until rice has absorbed most of the liquid but is still slightly underdone (should be tender but firm). Remove from heat and let sit covered for 5 minutes.

    Finish the filling

    Fluff the rice with a fork. Stir in the chopped parsley, dill, mint, toasted pine nuts (if using), and currants (if using). Taste and adjust salt and pepper. Let the mixture cool until warm but manageable for rolling (about 15–20 minutes).

Assemble & roll dolmas

    Prepare your work surface with a shallow bowl of warm water to moisten any slightly dry leaves and a small plate for finished rolls.

    Place one grape leaf shiny side down and stem end toward you. Put about 1 to 1 1/2 teaspoons (about 1 tablespoon for larger leaves) of the filling near the stem, centered horizontally but leaving 1/2 inch from the sides and stem.

    Fold the bottom (stem) edge up over the filling, fold both sides in toward the center, then roll away from you into a tight cylinder. Do not overstuff — the rice will expand. Place each roll seam side down on the plate.

    Repeat with remaining leaves and filling. If you have leftover filling, reserve to serve alongside or make extra small parcels.

Cook stuffed grape leaves

    Line the bottom of a wide, heavy-bottomed pot with a few unused or torn grape leaves to prevent sticking. Arrange the stuffed grape leaves seam side down in tight concentric circles or rows, packing them snugly so they won't unfurl during cooking. Build up additional layers as needed.

    Whisk together 1.5 cups water, 2 tbsp lemon juice, and 2 tbsp olive oil. Pour the liquid gently over the arranged dolmas — there should be enough to mostly cover the rolls (add a little more water if necessary). Place a plate (smaller than the pot) upside down over the dolmas to keep them submerged and from unrolling.

    Bring the pot to a gentle simmer over medium-low heat. Cover and simmer very gently for 35–45 minutes until the rice is fully tender and leaves are soft. Avoid boiling vigorously, which can cause tearing.

    Turn off the heat and let the pot sit, covered, for 15–20 minutes to finish steaming and firm up the rolls.

Serve

    Carefully remove the plate and transfer the cooled dolmas to a serving platter. Drizzle with 2–3 tbsp extra-virgin olive oil and squeeze fresh lemon juice over them. Serve warm or at room temperature with additional lemon wedges and plain yogurt or tzatziki if desired.

    Store leftovers covered in the refrigerator for up to 3–4 days. They often taste better the next day after flavors meld.
