    Cook the sausages

    Heat 1 tablespoon vegetable oil in a nonstick skillet over medium heat. Add the 2 veggie sausages and cook, turning occasionally, until evenly browned and heated through, about 10–12 minutes (internal texture should be hot and firm). If sausages are pre-cooked, reduce time to 6–8 minutes to brown. Remove from pan and keep warm.

Chips (Fries)

    Prepare potatoes

    If using whole potatoes, scrub and cut into chips/fries about 1/2-inch thick. If using pre-cut chips, measure 2 cups. Rinse cut potatoes in cold water until water runs clear to remove excess starch, then pat dry with a towel.

    Cook chips (oven method)

    Preheat oven to 220°C / 425°F. Toss the dried potato chips with 2 tablespoons vegetable oil, 1 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon smoked paprika (optional) in a bowl. Spread in a single layer on a baking sheet lined with parchment. Roast for 25–30 minutes, turning once halfway through, until golden and crisp.

    Cook chips (pan-fry alternative)

    Heat a tablespoon of oil in a heavy skillet over medium-high heat. Add potato chips in a single layer and fry, turning occasionally, about 10–12 minutes, until golden and cooked through. Drain on paper towels and finish with a pinch more salt.

Peas or Baked Beans

    Cook garden peas

    To serve peas: bring a small saucepan of water to a gentle boil. Add 1 cup frozen garden peas and cook for 2–3 minutes until tender and bright green. Drain, return to the pan off the heat, stir in 1 teaspoon butter, 1/4 teaspoon salt and 1/8 teaspoon black pepper. Keep warm.

    Or heat baked beans

    To serve baked beans: empty 1 cup canned baked beans into a small saucepan. Warm over low-medium heat, stirring occasionally, until gently bubbling and hot, about 5–6 minutes. Taste and adjust seasoning if desired.

To Serve

    Divide the two cooked veggie sausages between plates. Add a portion of chips and a serving of either the buttered peas or warmed baked beans. Spoon 2 tablespoons ketchup or brown sauce on the side or over the sausages. Garnish with chopped parsley if using. Serve immediately.
