Prepare eggs
Crack the eggs into a medium bowl. Add the milk, a pinch of fine sea salt and a pinch of freshly ground black pepper. Whisk vigorously until mixture is uniformly pale and slightly frothy (about 20–30 seconds). This produces a tender omelette.

Taste a small drop of the egg mixture (optional) and adjust seasoning with a tiny additional pinch of salt if needed, remembering smoked salmon and capers are salty.

Prepare filling components
While whisking or just before cooking, mix the softened cream cheese with the minced shallot and chopped dill in a small bowl until smooth but slightly chunky. Fold in the drained capers. Tear or cut the smoked salmon slices into bite-sized strips or pieces and set aside on a plate.

If you prefer the salmon slightly warmed, reserve a few strips to place inside after warming the omelette briefly (see plating). Cold-smoked salmon is typically served cold and delicate heat can change texture.

Cook eggs
Pour the whisked eggs into the warm pan. Allow them to set undisturbed for about 10–20 seconds until the edges begin to set. Using a silicone spatula, gently stir the eggs in small concentric motions for 10–20 seconds to create soft curds, then tilt the pan and let the remaining uncooked egg flow to the edges. Continue until the eggs are mostly set but still slightly glossy and soft on top (total cooking time about 1.5–2.5 minutes depending on heat).

Add filling
Lower the heat to very low. Dollop the cream cheese mixture across one half of the omelette in an even line (about 2 tablespoons per serving). Distribute the smoked salmon pieces evenly over the cream cheese, reserving a few small pieces for garnish. Sprinkle the remaining chopped dill if desired.

Fold and finish
Using the spatula, gently fold the empty half of the omelette over the filled half to create a semicircle. Let it rest in the pan for 15–30 seconds on low heat to warm the filling slightly — avoid overheating to keep the salmon texture delicate. If you prefer using residual heat only, remove immediately.

Carefully slide the omelette onto a warm plate. Garnish with reserved smoked salmon pieces, extra dill sprigs, a few capers, and a lemon wedge. Serve immediately.
