Proteins & Eggs
- 1
Cook bacon
Heat a large non-stick frying pan over medium heat. Add the streaky bacon rashers in a single layer (no oil needed). Cook for 3–4 minutes per side until golden and crisp to your liking. Transfer to a plate lined with kitchen paper to drain and keep warm.

- 3
Fry eggs
Wipe the pan lightly if too greasy, then add 1 tbs unsalted butter and melt over medium-low heat. Crack in the eggs and cook for 2–3 minutes for runny yolks or 4–5 minutes for firmer yolks. Season with a pinch of salt and black pepper. For sunny-side-up cover briefly with a lid for 30–60 seconds to set the whites if needed. Transfer eggs to plates when done.
Beans & Vegetables
- 4
Warm baked beans
While the sausages cook, heat the baked beans in a small saucepan over low heat, stirring occasionally, for 4–6 minutes until gently bubbling. If too thick, add 1–2 tbs water. Keep warm on very low heat and season with a little black pepper to taste.
- 5
Pan-roast tomato
Half the large tomato horizontally. Heat a small frying pan over medium-high heat with 1 tsp olive oil. Place the cut side down and season with a pinch of salt and pepper. Cook for 2–3 minutes until lightly charred and softened, then flip and cook 30 seconds more. Remove from heat and keep warm.
Toast & Finish

Assemble: divide beans between two small plates or one platter. Add 2 bacon rashers and 2 sausages per serving. Place a fried egg on each plate and add the charred tomato halves. Serve the buttered toast on the side and sprinkle optional chopped fresh parsley over the eggs and tomato.

Serve immediately while hot. Provide salt and black pepper at the table for extra seasoning.
