Sauté onion and garlic
Heat a large skillet over medium heat. Add olive oil and 1 tablespoon butter. When butter foams, add the chopped onion and a pinch of salt. Cook, stirring occasionally, until onion is soft and translucent, about 5–7 minutes. Add the minced garlic and thyme and cook 30–45 seconds until fragrant (do not brown).

Cook mushrooms
Increase heat to medium-high and add the sliced mushrooms to the pan. Spread them in an even layer and let them sear without stirring for 2 minutes to develop color, then stir occasionally until they release their liquid and it mostly evaporates, about 6–8 minutes. Season with 1/2 teaspoon of the salt and 1/2 teaspoon of the black pepper while cooking.

Make a quick garlic sauce
Push mushrooms to one side of the pan. Add remaining 1 tablespoon butter to the cleared space and sprinkle the flour over the butter; cook for 30–45 seconds to remove raw flour taste. Slowly pour in the stock while stirring or scraping the bottom of the pan to incorporate browned bits. Stir in the heavy cream, soy or Worcestershire sauce, lemon juice, remaining salt and pepper, and red pepper flakes. Reduce heat to medium-low and simmer gently for 2–3 minutes until sauce thickens and coats the mushrooms.

Finish sauce
Taste and adjust seasoning — add more salt, pepper, or lemon juice to balance. Stir in half of the chopped parsley. If sauce is too thin, simmer 1–2 minutes more; if too thick, add 1–2 tablespoons stock or water.

Assemble and top with cheese
Preheat oven broiler (or set oven to 220°C / 425°F for a short bake). Transfer the mushroom mixture to an oven-safe skillet or shallow baking dish if your pan is not broiler-safe. Sprinkle the grated mozzarella evenly over the top, then the Parmesan if using. For a crunchy finish, sprinkle breadcrumbs over the cheese.

Melt and brown the cheese
Place under the broiler 3–5 minutes, watching closely, until cheese is melted and edges are golden and bubbling. If using an oven instead of broiler, bake 8–10 minutes until cheese melts and browns lightly.

Garnish and serve
Remove from oven and let cool 2 minutes. Sprinkle remaining parsley over the top. Serve hot as an appetizer, side, or over toasted bread or rice.
