Prepare and Dice Liver
Rinse the lamb liver under cold water and pat dry thoroughly with paper towels. Trim away membranes, connective tissue, and any greenish sections. Slice the liver into 1 to 1.5 cm (about 1/2 inch) bite-sized cubes. Pat the cubes dry again to remove surface moisture.

Season and Dredge
In a shallow bowl or plate combine the flour, salt, black pepper, and red pepper flakes (if using). Lightly toss the liver cubes in the seasoned flour to coat all sides; shake off excess flour and place coated pieces on a tray.

Sauté Liver
Working in a single layer (cook in batches if necessary), add the dredged liver cubes to the hot pan. Sear without crowding for 1.5–2 minutes on the first side, then stir or flip and cook an additional 1–1.5 minutes until the exterior is browned but the interior remains slightly pink. Lamb liver cooks quickly — avoid overcooking to keep it tender. Remove cooked liver to a warm platter and tent loosely with foil. Add remaining 1 tablespoon butter to the pan before proceeding.

Prepare Onion
While the liver rests, thinly slice the onion into half-moons. Return the skillet to medium heat (if needed). Add the sliced onion to the pan with the melted butter and sauté, stirring frequently, until softened and lightly golden, about 4–6 minutes. Deglaze the pan by scraping up any browned bits from the bottom with a wooden spoon; those add flavor.

Add Parsley and Lemon
Remove the pan from the heat. Stir in the finely chopped parsley and squeeze the juice of half to whole lemon over the liver (start with half a lemon, taste, and add more if you like a brighter finish). Toss gently and transfer to a serving dish.

Sprinkle sumac over the plated liver for a tangy, slightly astringent finish if desired. Serve immediately with crusty bread or lavash to soak up the juices. Leftovers can be refrigerated in an airtight container for up to 2 days but are best enjoyed fresh.
