Prepare the Pork Belly

Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crisscross pattern and season generously with salt and black pepper.

Sear the Pork Belly

In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the pork belly, skin-side down, until crispy and golden, about 5-7 minutes. Flip and sear the other side for another 5 minutes.

Make the Peach Glaze

While the pork is searing, pit and chop the fresh peaches. In a small saucepan, combine chopped peaches, brown sugar, soy sauce, apple cider vinegar, fresh thyme, and minced garlic. Cook over medium heat until the peaches break down and the sauce thickens, about 10-15 minutes.

Glaze the Pork Belly

Once the pork belly is seared, brush the peach glaze generously over the top. Reserve some glaze for later.

Transfer the skillet to the preheated oven and roast for about 2 hours, or until tender. Baste with the reserved glaze halfway through the cooking time.
