Prepare the Vegetables

Slice the heirloom tomatoes in half and thinly slice the radishes. Set aside.

Cook the Salmon

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and black pepper. Place the salmon skin-side down in the skillet and sear for 4-5 minutes until the skin is crispy. Flip the salmon and cook for an additional 3-4 minutes until cooked through.

Blister the Tomatoes

In the same skillet, add the halved heirloom tomatoes and cook for 2-3 minutes until they are blistered and softened.

Plating

On each plate, place a salmon fillet, top it with a generous spoonful of pesto, and arrange the blistered tomatoes and sliced radishes around it. Finish with a sprinkle of lemon zest.
