Prepare the Meatball Mixture
In a large bowl, combine the ground duck, minced garlic, grated ginger, chopped green onion, panko breadcrumbs, egg, soy sauce, sesame oil, salt, and black pepper. Mix until just combined.
Shape the Meatballs
Using your hands, form the mixture into small meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.
Cook the Meatballs
Preheat the oven to 400°F (200°C). Bake the meatballs for 20-25 minutes or until they are cooked through and crispy on the outside.
Prepare Whipped Ricotta
While the meatballs are baking, whip the ricotta cheese in a bowl until it is smooth and creamy. Season with salt and pepper to taste.
Serve
Serve the crispy duck meatballs with a side of spicy chili jam and a dollop of whipped ricotta. Garnish with candied kumquat slices.
