Cooking Pasta

Boil Water

In a large pot, bring salted water to a boil.

Cook Penne

Add penne pasta to boiling water and cook according to package instructions, usually about 11-13 minutes, until al dente.

Drain Pasta

Once cooked, drain the pasta and set aside, reserving a bit of pasta water.

Making Chipotle Cream Sauce

Melt Butter

In a large skillet, melt butter over medium heat.

Sauté Garlic

Add minced garlic and sauté for about 1 minute until fragrant.

Add Chipotle Peppers

Stir in the minced chipotle peppers and cook for another minute.

Add Cream

Pour in the heavy cream and stir to combine. Bring to a gentle simmer.

Incorporate Cheese

Gradually whisk in the grated Parmesan cheese until melted and the sauce thickens slightly.

Season Sauce

Season with salt and black pepper to taste. Remove from heat.

Cooking Steak Tips

Prepare Steak

In a bowl, combine filet mignon tips, olive oil, balsamic vinegar, salt, and black pepper. Toss to coat.

In a hot skillet, cook the steak tips for about 3-4 minutes on each side, or until they reach your desired doneness.

Combining Ingredients

Combine Pasta and Sauce

In the skillet with the chipotle cream sauce, add the cooked penne pasta. Toss to combine, adding a splash of reserved pasta water if needed for consistency.

Plate the Dish

Serve the pasta on plates, topped with steak tips, crumbled gorgonzola, and diced heirloom tomatoes.

Drizzle balsamic reduction over the top and serve with garlic toast on the side.
