Prepare the Cherry Tomatoes
Preheat your oven to 400°F (200°C). Toss the cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for about 15-20 minutes until they are soft and slightly blistered.
Cook the Spinach
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the fresh spinach and cook, stirring frequently, until wilted, about 3-4 minutes. Season with salt and pepper to taste. Remove from heat and set aside.
Make the Herb Butter
In a small bowl, mix the softened butter with lemon juice and chopped fresh herbs. Set aside.
Cook the Tilapia
In the same skillet, add the remaining tablespoon of olive oil and heat over medium-high heat. Season the tilapia fillets with salt and pepper. Add the fillets to the skillet and cook for about 3-4 minutes on each side, or until golden and cooked through.
Serve the Dish
On each plate, place a portion of sautéed spinach, top with a seared tilapia fillet, and spoon the roasted cherry tomatoes over the top. Finish with a dollop of the herb butter and a squeeze of fresh lemon juice if desired.
