Prepare the Dough
In a large bowl, mix the warm water and yeast. Let it sit for about 5 minutes until frothy. Add the olive oil, flour, and salt. Stir until combined.
Knead the Dough
Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic. The dough will be slightly sticky.
First Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 to 2 hours, or until doubled in size.
Shape the Ciabattini
Once risen, gently deflate the dough and divide it into smaller portions. Shape each portion into a rectangular loaf. Place them on a floured baking sheet.
Second Rise
Cover the shaped loaves with a towel and let them rise for another 30 minutes.
Preheat the Oven
Preheat your oven to 450°F (230°C).
Bake the Ciabattini
Bake in the preheated oven for about 20-25 minutes until golden brown and hollow sounding when tapped on the bottom.
Cool and Serve
Let the ciabattini cool on a wire rack before slicing. Serve with Kalamata olive spread and pesto drizzled with extra virgin olive oil.
