    Beat eggs

    Crack the 2 large eggs into a small bowl. Add 2 tablespoons whole milk, a pinch of salt and a pinch of black pepper. Whisk briskly until the mixture is uniform and slightly frothy (about 15–20 seconds).

    Preheat pan

    Place a nonstick skillet over medium-low heat and add 1 teaspoon unsalted butter. Let the butter melt and foam but not brown (about 30 seconds). Swirl to coat the pan.

    Cook eggs

    Pour the beaten eggs into the warm skillet. Let sit undisturbed for about 10–15 seconds, then using a silicone spatula, gently push the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Repeat in 10–15 second intervals until eggs are mostly set but still slightly glossy — about 2–3 minutes total for soft, creamy eggs. Remove from heat just before fully firm to avoid overcooking.

    Prepare vegetables

    While the eggs are cooking, halve the cherry tomatoes. Roughly chop the green onion (both white and green parts). If using larger spinach leaves, roughly chop them so they wilt quickly.

    Sauté vegetables (optional)

    If you prefer warmed vegetables, in a small separate skillet heat 1 teaspoon olive oil over medium heat. Add the white part of the green onion and sauté for 30 seconds, add the cherry tomatoes and cook until they begin to blister, about 1–2 minutes. Add the baby spinach and cook until wilted, about 30 seconds. Season lightly with a pinch of salt and a grind of black pepper. Remove from heat.

    Combine with eggs

    Either fold the sautéed vegetables into the eggs in the main skillet in the last 15–20 seconds of cooking, or if you didn’t sauté, sprinkle the raw chopped green onion, halved cherry tomatoes and baby spinach over the eggs just before removing from heat so the residual heat slightly softens them.

Cheese & Finish

    Add cheese

    Sprinkle 2 tablespoons crumbled feta or shredded cheddar over the eggs immediately after removing the pan from heat so the cheese softens but doesn’t fully melt. If you prefer melted cheese, return the pan to very low heat for 10–15 seconds.

    Garnish

    Scatter 1 teaspoon chopped fresh herbs (parsley or chives) over the eggs for brightness. Taste and adjust with an extra pinch of salt and pepper if needed.

To Serve (optional)

    Toast 1 slice whole grain bread and spread butter or avocado if desired. Transfer the eggs to the plate and serve with the toast. Add 1 teaspoon hot sauce or salsa on the side if you like extra heat.
