Prepare yogurt base
In a medium bowl, whisk together the Greek yogurt, honey and vanilla extract until smooth and slightly aerated. Taste and adjust sweetness with more honey if desired. Keep chilled while preparing fruit.

Wash and prepare fruit
Rinse strawberries and blueberries under cold water. Hull and quarter the strawberries. Slice the banana into 1/4-inch rounds. Peel and slice the kiwi into rounds or half-moons. Place all prepared fruit in a bowl.

If using lemon juice, drizzle it over the cut fruit and gently toss to coat — this prevents browning (especially for banana and apple if substituted) and brightens flavor.
Granola

Measure the granola into a small bowl to keep it crisp. If you prefer slightly softened granola, mix 1 to 2 tablespoons of yogurt with the granola just before assembling.

Finish each bowl with 1 teaspoon chia or hemp seeds and 1 tablespoon toasted sliced almonds. Drizzle a little maple syrup over the top if you want extra sweetness.

Serve immediately so the granola remains crunchy. If making ahead, keep granola separate and add right before serving.
