Espresso
Pull espresso
Measure and grind 18 g of fresh espresso beans to a fine espresso grind. Tamp evenly in the portafilter. Pull a double shot of espresso (about 30 ml) directly into a heatproof small pitcher or cup. If you don't have an espresso machine, brew 60 ml very strong coffee using an Aeropress or Moka pot and use 30 ml immediately.
Milk & Sweeteners
Combine sweeteners with milk
In a separate small pitcher, add 1 tablespoon lavender syrup and 1 teaspoon honey. Pour in 8 oz (240 ml) chilled whole milk. Stir vigorously for 15–20 seconds until honey is fully dissolved and the syrup is evenly distributed. Taste and adjust: add up to 1/2 tablespoon more lavender syrup or another 1/2 teaspoon honey if you prefer sweeter.
Optional - froth milk
If you like a lightly textured top, briefly aerate the milk mixture with a milk frother or steam wand for 5–8 seconds until slightly foamy but still cold. This step is optional for an iced latte.
Assembly
Garnish & serve
Garnish with an optional fresh lavender sprig or a light drizzle of lavender syrup on top. Serve immediately with a straw. Provide a small spoon if the espresso has layered strongly and the guest prefers to stir.
