Prep cucumbers and mint

Peel and halve the cucumbers lengthwise. Use a spoon to scrape out seeds if they are watery or seedy; roughly chop the remaining flesh into chunks. Rinse and lightly pat dry the mint leaves; discard stems.

Blend purée

Place the chopped cucumber, mint leaves, lime juice, and 1 cup cold water into a high-speed blender. Blend on high until completely smooth, about 45–60 seconds. Stop and scrape down the sides once if needed.

Strain (optional for silky texture)

For an ultra-smooth sorbet, pour the purée through a fine-mesh sieve into a bowl, pressing on the solids with a spatula to extract as much liquid as possible. Discard solids. If you prefer a more rustic texture, skip straining.

Simple Syrup

Make syrup

Combine 1 cup sugar and 1 cup water in a small saucepan. Warm over medium heat, stirring until the sugar fully dissolves. Once clear and just simmering, remove from heat and cool to room temperature (about 15 minutes).

Chill syrup

Refrigerate the syrup until cold before mixing with the cucumber purée. This prevents melting ice crystals and helps sorbet texture.

Assembly and Freezing

Combine and adjust

In a large bowl, whisk the chilled simple syrup into the strained cucumber-mint purée until fully combined. Taste and add 1/4 teaspoon fine sea salt to brighten flavors. Adjust balance: add up to 1 tablespoon more lime juice if it needs more acidity, or up to 2 tablespoons more syrup (cooled) if not sweet enough.

Chill mixture

Cover the mixture and refrigerate until thoroughly cold, at least 1 hour (preferably 2 hours). Proper chilling improves churned sorbet texture.

Churn

Pour the chilled mixture into an ice cream maker and churn according to manufacturer instructions until it reaches a soft-serve consistency, typically 20–30 minutes.

Firm and store

Spoon the churned sorbet into a shallow airtight container, smooth the top, and press a piece of plastic wrap directly onto the surface to prevent ice crystals. Freeze until firm, 2–4 hours.

Serving

Scoop and garnish

Let the sorbet sit at room temperature for 3–5 minutes to soften slightly. Scoop into chilled bowls or glasses. Garnish with a light sprinkle of lime zest and a mint sprig. Serve immediately.

Store tightly covered in the freezer for up to 2 weeks. If icy, let sit 5–10 minutes at room temperature and re-whip briefly with a fork to restore scoopable texture.
