Method

Barley Risotto

Warm the stock

Place the chicken or vegetable stock in a small saucepan and keep it warm over low heat; do not boil.

Sauté aromatics

In a medium heavy-bottomed saucepan heat 1 tablespoon olive oil over medium heat. Add the minced shallot and cook until translucent, about 2 minutes. Add the garlic and cook 30 seconds until fragrant.

Toast the barley: add the pearl barley to the pan and stir to coat for 2–3 minutes until slightly nutty and translucent at the edges.

Deglaze with wine: pour in the 1 cup dry white wine and simmer, stirring, until the wine is mostly absorbed.

Cook with stock: add a ladle (about 3/4 cup) of warm stock to the barley and stir frequently until absorbed. Continue adding stock, one ladle at a time, stirring and allowing absorption before each addition. This should take 25–30 minutes total until barley is tender but still slightly chewy.

Finish risotto: when barley is cooked, remove from heat and stir in 2 tablespoons butter, grated Parmesan, lemon zest, thyme, salt and black pepper. Adjust seasoning. Keep warm while finishing other components.

Asparagus & Roasted Tomatoes

Preheat oven to 425°F (220°C). Line a baking sheet with parchment or foil.

Toss asparagus and halved cherry tomatoes with 2 tablespoons olive oil, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Spread in a single layer.

Roast: place asparagus and tomatoes in the oven. Roast for 8–10 minutes until asparagus is tender-crisp and tomatoes are blistered and slightly caramelized. Remove from oven and, if using, drizzle tomatoes with 1 teaspoon balsamic glaze. Keep warm.

Citrus Beurre Blanc

Combine shallot, white wine and white wine vinegar in a small saucepan over medium heat. Simmer until the liquid is reduced to about 2 tablespoons (this concentrates the flavor).

Add citrus: stir in lemon and orange juice. If using cream, add 1 teaspoon now and bring to a low simmer for 30 seconds to incorporate.

Mount the butter: reduce heat to low. Whisk in the cold cubed butter a few pieces at a time, whisking constantly until each addition emulsifies before adding more. Continue until sauce is smooth and slightly thickened. Keep the sauce warm but not hot (ideally over a warm water bath or the very lowest heat) to avoid breaking.

Season the sauce with 1/4 teaspoon salt and 1/4 teaspoon white or black pepper. Taste and adjust acidity or salt to balance. Hold warm.

Salmon

Pat salmon fillets dry with paper towels. Season both sides and the skin with 2 teaspoons kosher salt and 1 teaspoon freshly ground black pepper.

Heat a large nonstick or cast-iron skillet over medium-high heat until hot. Add 2 tablespoons olive oil and swirl to coat.

Sear skin-side down: place fillets skin-side down in the skillet and press gently with a spatula for 10 seconds to ensure even contact. Cook without moving for 4–5 minutes until the skin is deeply golden and crisp and the flesh is cooked about two-thirds of the way up the side.

Flip and finish: add 1 tablespoon butter to the pan, tilt the pan and spoon melted butter over the fillets while cooking for 1–2 minutes more until the salmon reaches an internal temperature of 120–125°F (49–52°C) for medium-rare to medium. Remove salmon to a warm plate and rest for 2 minutes; the carryover heat will finish cooking.

Plating & Garnish

Portion the risotto: divide the barley risotto among 4 warmed plates, making a shallow well in the center of each portion.

Arrange vegetables: place 3 asparagus spears and a portion of roasted tomatoes alongside the risotto on each plate.

Top with salmon: gently place one seared salmon fillet on each risotto portion, skin-side up if you prefer to show the sear or skin-side down for presentation.

Sauce: spoon 1–2 tablespoons of warm citrus beurre blanc around and lightly over the salmon (avoid pouring excessively to keep texture).

Garnish with microgreens or chopped parsley and serve with a lemon wedge on the side.
