Prepare all mix-in ingredients ahead of time: cook and crumble sausage, cook bacon until crisp and chop, dice ham. Dice tomatoes, bell peppers, red onion, slice mushrooms, chop jalapeños and drain canned green chilies. Shred/grate cheeses and portion into small bowls so each option is ready to add to omelets.

Whisk together eggs and milk in a bowl until homogenized and slightly frothy. Season with salt and pepper. This recipe yields four 2-egg omelets (serves 4).

For mushrooms, peppers, onions and spinach

Heat a large nonstick skillet over medium heat and add 1 tablespoon butter. When butter foams, add mushrooms and a pinch of salt; sauté 3–4 minutes until browned and moisture has evaporated. Remove to a bowl. Add remaining 1 tablespoon butter, add diced bell peppers and red onion; sauté 2–3 minutes until softened. Add chopped spinach and sauté 30–45 seconds until just wilted. Return mushrooms to the pan, toss, then transfer cooked vegetables to a serving bowl and keep warm.

For jalapeños and green chilies, you can leave raw for brightness, or warm them in the skillet 30 seconds to 1 minute to lessen heat.

Cook omelets

Heat a 9- to 10-inch nonstick skillet over medium-low to medium heat. Add 1/2 tablespoon butter and swirl to coat. Pour 2 eggs (about 1/2 cup of the egg mixture) into the pan and tilt to form an even circle.

Let the eggs set: after 10–15 seconds, use a silicone spatula to gently push the cooked edges toward the center while tilting the pan so uncooked egg runs to the edges. Continue for about 30–45 seconds until the top is mostly set but still slightly glossy.

Add fillings: choose about 2 tablespoons total of meats (sausage, bacon, or ham), 2 tablespoons of sautéed vegetables (or raw tomato/jalapeño/green chilies as desired) and 2–3 tablespoons of cheese (cheddar, gruyère, or feta—or a combination). Distribute evenly over half of the omelet.

Fold and finish: gently fold the empty half over the fillings using the spatula. Cook 20–30 seconds more to allow cheese to melt and fillings to warm through. For a slightly creamier center, remove from heat after 10–15 seconds and let residual heat finish cooking for about 30 seconds.

Slide the omelet onto a warmed plate. Garnish with snipped chives and a drizzle of hot sauce if desired. Repeat the cooking process for the remaining egg portions (add more butter to pan as needed).

Notes for an omelet station

Keep all pre-cooked meats and sautéed vegetables warm in covered containers set in a low oven (around 175°F / 80°C) or on warming trays. Keep delicate items like raw tomatoes, crumbled feta and fresh chives chilled until service and let guests add them after the omelet is cooked if desired.

Offer portion guidance: 2 eggs per guest for a light serving or 3 eggs for a hearty serving. Provide spoons/tongs for each mix-in to avoid cross-contamination.
