Prepare glass

Select a chilled rocks glass. If desired, briefly rinse the glass with cold water and discard to slightly chill.

Add maple and bitters

In the rocks glass (or a mixing glass if you prefer stirring), add 1/2 tablespoon pure maple syrup, 3 dashes black walnut bitters and 1 dash Angostura bitters (optional).

Add bourbon

Pour 2 oz bourbon into the glass with the maple syrup and bitters.

Combine and integrate

If using a mixing glass: add a large ice cube, stir gently for about 20–30 seconds until the mixture is well chilled and slightly diluted. If preparing directly in the serving glass: add the large ice cube and gently stir for 10–15 seconds to combine the maple syrup with the bourbon and bitters.

Express and garnish

Take the orange peel and hold it over the glass, skin side down. Give it a firm twist to express the oils over the surface of the drink, then rub the peel around the rim and drop it into the glass as a garnish. Add a Luxardo or brandied cherry on a pick if desired.

Serve

Serve immediately with one large ice cube. Sip slowly to enjoy the maple and walnut-bitters notes against the bourbon.
