Combine wet and dry

In a medium mixing bowl or jar with a lid, whisk together 1 cup coconut milk, 2 tablespoons maple syrup (or honey), 1/2 teaspoon vanilla extract and 1/8 teaspoon salt until evenly mixed.

Add chia and oats

Add 1/2 cup chia seeds and 1/2 cup rolled oats to the coconut milk mixture. Stir vigorously for 30–45 seconds to prevent clumping so the chia seeds are evenly distributed and the oats are incorporated.

Rest and mix

Let the mixture sit at room temperature for 5–10 minutes, then stir again to break up any clumps. If using a jar, cover and shake well.

Refrigerate overnight

Cover and refrigerate for at least 6 hours or overnight (8–12 hours ideal). The chia will gel and the oats will soften into a thick, spoonable pudding. Stir once before serving to adjust consistency — if too thick, stir in 1–2 tablespoons coconut milk.

House-Made Mixed Berry Compote

Cook berries

In a small saucepan over medium heat, combine 1 cup frozen mixed berries, 2 teaspoons granulated sugar, and 2 tablespoons cold water. Stir to combine and bring to a gentle simmer.

Break down and thicken

Simmer, stirring occasionally, for 6–8 minutes until berries have softened and begun to release juices. If you prefer a smoother compote, press berries lightly with the back of a spoon. For a thicker compote, mix 1/2 teaspoon cornstarch with 1 teaspoon cold water to make a slurry and stir it into the simmering berries; cook 1–2 minutes more until thickened.

Finish with lemon

Remove from heat and stir in 1 teaspoon fresh lemon juice to brighten the flavor. Let cool to room temperature, then chill in the refrigerator until cold (about 20–30 minutes) or use immediately at room temperature.

Assembly & Garnish

Spoon chilled chia-oats into serving glasses or bowls, filling roughly two-thirds full.

Top each serving with 2–3 tablespoons of mixed berry compote (adjust to taste).

Finish with 1 tablespoon toasted coconut flakes, a few fresh berries, and 1 tablespoon almond slivers or chopped nuts per serving if using.

Serve chilled. Leftovers: keep components separate in airtight containers in the refrigerator for up to 3 days; compote can be frozen for longer storage.
