Form patties

Place 1 lb ground beef in a bowl. Add 1 tsp salt, 1/2 tsp black pepper, 1/4 tsp garlic powder and 1/4 tsp onion powder. Gently mix just until combined — do not overwork. Divide into 12 equal portions (about 1.3 oz each) and form thin patties slightly larger than the slider buns (they will shrink while cooking).

Preheat pan

Heat a large skillet or griddle over medium-high heat. Add 1 tablespoon vegetable oil and swirl to coat. The pan should be hot but not smoking.

Cook patties

Working in one or two batches to avoid crowding, place patties in the hot skillet. Cook about 2 minutes on the first side until browned. Flip and cook 1 to 1 1/2 minutes on the second side for medium; add an additional 30–60 seconds if you prefer more well-done. During the last 30 seconds of cooking, place half a slice of American cheese over each patty (use 6 slices cut in half or stacked to fit sliders) and cover the pan with a lid or tented foil to melt the cheese.

Toast buns

While the patties finish, spread softened butter on the cut sides of the 12 slider buns. Place buns, buttered side down, on another skillet or the same griddle over medium heat and toast 1 to 2 minutes until lightly golden.

Assemble sliders

Top each bottom bun with a cheese-topped patty. Add thinly sliced onion, a pickle slice, and a small smear of ketchup and mustard to each slider (about 1/2 tsp ketchup and a light dab of mustard per slider). Cover with the bun tops and keep warm until serving.

If using full-size American cheese slices, cut each slice in half to fit the sliders before adding to patties. Prepare onion (thinly sliced) and pickle slices so they are ready to top the cooked patties. Portion ketchup and mustard into small bowls for easy assembly or to serve on the side.

French Fries

Oven or air-fryer (for frozen fries)

Preheat oven to 425°F (220°C) or set air fryer to 400°F (200°C). Spread frozen fries on a baking sheet in a single layer (or in the air fryer basket). Lightly toss with 2 tablespoons vegetable oil, 1 teaspoon salt and 1/4 teaspoon paprika if using. Bake 18–22 minutes (or air-fry 12–15 minutes), flipping halfway, until golden and crispy. Adjust time per package instructions.

Fresh fries (if using potatoes)

If using fresh cut russet fries, soak cut potatoes in cold water for 30 minutes, drain and pat dry. Toss with 2 tablespoons oil, 1 teaspoon salt and 1/4 teaspoon paprika. Spread in a single layer on a baking sheet and bake at 425°F (220°C) for 30–35 minutes, turning once, until crisp and golden. For extra-crisp fries, double-bake: bake 20 minutes, remove and increase heat to 450°F (230°C) and finish 8–12 minutes.

Serve fries

Taste and adjust seasoning with a little more salt if needed. Serve fries hot alongside the cheese sliders, with ketchup and mustard available for dipping.
