House-made Basil Mayo

Blend basil mayo

In a small blender or food processor, combine 0.5 cup mayonnaise, 12 fresh basil leaves (stems removed), 1 tsp fresh lemon juice, 0.5 tsp minced garlic (about half a small clove), 1 tsp extra-virgin olive oil, 0.125 tsp salt and 0.0625 tsp freshly ground black pepper. Pulse until basil is fully incorporated and mayo is smooth and uniformly green, about 6–10 one-second pulses. Scrape into a small bowl, taste and adjust seasoning if needed. Refrigerate while preparing sandwich. Makes about 6–8 tablespoons.

Prepare bacon

Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. Arrange 4 slices thick-cut bacon in a single layer on the rack. Bake until crisp and browned, 15–20 minutes depending on thickness. Remove and transfer bacon to a paper-towel-lined plate to drain and keep warm. Alternatively, pan-fry over medium heat for 8–12 minutes, turning, then drain.

Toast bread

While bacon cooks (or after), spread 1 tbs unsalted butter evenly over one side of each of the 2 sourdough slices. Heat a skillet over medium heat and toast buttered bread slices, buttered-side down, until golden brown and crisp, about 2–3 minutes per side. Alternatively, toast in a toaster and butter after toasting.

Prepare tomato and lettuce

Slice 0.5 heirloom tomato into 3–4 even slices about 1/4-inch thick. Lightly season tomato slices with 0.25 tsp salt and 0.125 tsp freshly ground black pepper; let sit 1–2 minutes to draw out flavor. Rinse and pat dry 2 gem lettuce leaves; trim any tough stem.

Assemble sandwich

Spread about 1 to 1.5 tbs of the house-made basil mayo on the toasted side of each sourdough slice. On one slice, layer lettuce leaves (slightly overlapped), then place tomato slices, then arrange the 4 bacon slices over the tomato. Top with the other mayo-spread slice, toasted side down. Press gently to compact.

Finish and serve

Cut sandwich in half on a diagonal if desired. Serve immediately while bacon is warm and bread is crisp. Optional: serve with kettle chips or a pickle on the side.
