Bring to temp
Remove filets from refrigerator 30–45 minutes before cooking to bring toward room temperature. Pat dry with paper towels.
Season
Season both sides of each filet with kosher salt and freshly ground black pepper. Press gently so seasoning adheres.
Sear and Finish
Preheat oven to 400°F (200°C). Heat a heavy skillet (cast iron preferred) over high heat until smoking. Add neutral oil and 1 tbsp butter. Sear filets 2–3 minutes per side until a deep brown crust forms. Add remaining 1 tbsp butter and baste the tops for 30 seconds. Transfer skillet to preheated oven and roast until internal temperature reaches 125°F (51°C) for medium-rare (about 6–8 minutes depending on thickness). Remove filets to a resting rack and tent loosely with foil for 8–10 minutes before serving.
Black Garlic Crust
Prepare black garlic paste
In a small food processor or bowl, mash 8 peeled black garlic cloves into a smooth paste. Add lemon zest, parsley, fine salt, and olive oil and pulse/whisk until combined. The paste should be spreadable.
Optional panko crust
If using panko (or GF panko), toast panko in a dry skillet over medium heat until golden, about 3–4 minutes, stirring constantly. Allow to cool slightly, then fold into the black garlic paste to create a coarse crust you can press onto the filets. If avoiding breadcrumbs, simply use the paste as a glaze.
Apply crust
After searing (either before oven finish or immediately after resting — pick one method): For oven-finish method: spread a thin layer (about 1 tbsp) of the black garlic mixture on top of each seared filet and return to the oven for 2–3 minutes to set the crust (do not overcook). For post-rest method: spread the mixture on the rested steaks just before serving to preserve more raw black garlic flavor. Ensure even coverage and press gently so crust adheres.
Black Garlic Jus
Sauté shallot and garlic
While filets rest, heat a small saucepan over medium heat with 1 tsp olive oil or pan drippings. Add finely chopped shallot and sauté until translucent, about 2–3 minutes. Add 6 black garlic cloves and cook, mashing slightly, for 1 minute to warm and release aroma.
Add stock and aromatics
Add the beef demi-glace or reduced beef stock and the thyme sprig. Simmer gently until slightly thickened and coats the back of a spoon, about 6–10 minutes. Remove thyme sprig.
Finish sauce
Off the heat, whisk in the cold cubed butter, one piece at a time, to create a glossy emulsion. Stir in soy sauce/tamari and black pepper. If the sauce is too thick, adjust with a tablespoon or two of warm water or stock. Taste and adjust seasoning with salt if needed.
Whole Roasted Garlic & Charred Onion
Roast whole garlic
Preheat oven to 400°F (200°C) if not already. Trim tops of whole garlic heads to expose tops of cloves, place on a small sheet of foil, drizzle with 1 tbsp olive oil, sprinkle with a pinch of salt, wrap tightly in foil and roast for 30–40 minutes until cloves are soft and caramelized. Cool slightly, then squeeze roasted cloves from skins; reserve for plating or to smear on steak.
Char onion
While filets sear or in a separate skillet, brush both sides of the 1-inch onion rounds with remaining 1 tbsp olive oil and season with salt and pepper. Heat a cast iron or stainless pan over high heat until smoking. Place onion rounds and sear 2–3 minutes per side until deeply charred but still slightly crisp in the center. Remove from heat and keep warm.
Plating & Finishing
Place a charred onion round on each plate (or stack as desired). Set the rested, black garlic–crusted filet on the onion.
Spoon 2–3 tablespoons of warm black garlic jus alongside or partially over the filet. Add a dollop of roasted whole garlic (1/2 head divided among plates) or smear a few roasted black garlic cloves if you prefer extra sweetness.
Scatter microgreens or baby arugula and finish with a light sprinkle of flaky sea salt. Serve immediately.
