Method
Dough & assembly
Preheat oven and prep
Place a pizza stone or inverted baking sheet in the oven and preheat to 500°F (260°C) for at least 30 minutes. If using a home oven that won't reach 500°F safely, preheat to the highest temperature (450–480°F). Lightly dust a pizza peel or cutting board with cornmeal or semolina.
Stretch or roll the dough into a 12-inch round on the dusted surface. Transfer dough to the peel or prepared baking sheet. Brush the outer 1/2-inch rim lightly with 1 tablespoon olive oil to encourage browning.
Sauce & cheese
Spread 3 tablespoons of tomato sauce evenly over the dough, leaving a 1/2-inch border for the crust. Use the back of a spoon to create an even layer.
Evenly sprinkle 2 cups shredded mozzarella over the sauced surface, leaving the crust clear.
If using, sprinkle 2 teaspoons grated parmesan lightly over the cheese for added flavor.
Meats
Distribute the prepared meats evenly over the cheese: arrange the 20 pepperoni slices in a single layer, scatter the 3 oz ham pieces, sprinkle the 3 oz cooked and crumbled Italian sausage, and place the 2 oz halved salami slices so toppings cover the pizza without heavy piling in one spot.
Tip: If using raw Italian sausage, remove casing, brown and drain in a skillet over medium heat for 6–8 minutes before crumbling and using.
Vegetables & olives
Finishing & bake
Sprinkle 1/2 teaspoon dried oregano evenly over the assembled pizza and, if desired, 1/4 teaspoon crushed red pepper flakes for heat.
Carefully slide the pizza onto the preheated stone or baking sheet. Bake at 500°F (or oven max) for 8–12 minutes, rotating once halfway, until the crust is golden and cheese is bubbling and slightly browned. If baked at a lower temperature, time may increase to 12–16 minutes.
Remove the pizza from oven and transfer to a cutting board. Let rest 2–3 minutes to set the cheese.
Garnish with fresh basil leaves if using, slice into 8 slices, and serve hot.
