Prepare chicken
Preheat oven to 425°F (220°C). Pat each chicken breast dry with paper towels. If breasts are uneven thickness, place in a resealable bag and gently pound with a meat mallet to an even 3/4"–1" thickness.
Season and set up breading station
Season both sides of each chicken breast with 1 tsp salt, 1 tsp black pepper and 1/2 tsp garlic powder (divide evenly). Set up three shallow dishes: 1) flour, 2) beaten eggs mixed with 2 tbsp milk, 3) breadcrumbs combined with 1/4 cup grated Parmesan and 1 tsp dried Italian seasoning.
Bread the chicken
Dredge each breast lightly in flour, shaking off excess. Dip into the egg mixture, then press into the breadcrumb mixture, coating thoroughly and pressing to adhere. Place breaded breasts on a baking sheet lined with parchment.
Add cheese and finish baking
Remove pan from oven after 18 minutes. Spoon about 1/2 cup warmed marinara over each breast (reserve remaining sauce for spaghetti), then top each with about 1/2 cup shredded mozzarella and sprinkle 2 tbsp grated Parmesan (divide the listed quantities). Return to oven and bake 5–7 more minutes until cheese is melted and internal temperature reaches 165°F (74°C). If needed, broil 1–2 minutes to brown cheese—watch closely.
Spaghetti & Sauce
Cook pasta
While chicken bakes, bring a large pot of salted water to a rolling boil. Add 8 oz spaghetti and cook according to package directions until al dente (usually 8–10 minutes). Reserve 1/2 cup pasta cooking water, then drain spaghetti.
Heat sauce
In a medium saucepan over medium heat, warm 1 tbsp olive oil. Add 1 minced garlic clove and sauté 30 seconds until fragrant (do not brown). Add 2 cups jarred marinara, 1/2 tsp dried basil, 1/4 tsp salt and 1/4 tsp pepper. Simmer 4–6 minutes. If sauce is very thick, stir in up to 1/4–1/2 cup reserved pasta water to reach desired consistency.
Combine pasta and sauce
Add drained spaghetti to the sauce, toss gently to coat evenly. Keep warm until ready to serve.
Plating & Garnish
Divide sauced spaghetti between two plates (or serve a large portion family-style). Place one baked chicken breast on top of each portion of spaghetti. Spoon any pan juices or extra sauce over chicken. Garnish with fresh basil leaves and a sprinkle of extra grated Parmesan if desired.
