Form patties

Divide the ground beef into two equal portions (about 8 oz / 225 g each). Gently shape each portion into a loose ball, then flatten to form a patty about 3/4 inch (2 cm) thick and slightly larger than your bun (they will shrink while cooking). Make a shallow dimple in the center of each patty with your thumb to help prevent doming.

Season both sides of each patty generously with kosher salt and freshly ground black pepper just before cooking.

Cook patties

Heat a heavy skillet or cast-iron pan over medium-high heat. Add 1 tablespoon vegetable oil and let it shimmer. Place the patties in the hot pan (do not overcrowd). Cook undisturbed for 3-4 minutes until a brown crust forms. Flip and cook another 3-4 minutes for medium (adjust time for desired doneness). If using cheese, place a cheese slice on each patty during the last 1 minute of cooking and cover the pan briefly to melt.

Transfer cooked patties to a plate and let rest 3 minutes while you toast buns and finish toppings.

Buns & Condiments

Split the buns and spread softened butter or a thin layer of mayonnaise on the cut sides. Place cut-side down in a dry skillet over medium heat or under a broiler until golden and lightly crisp, about 1-2 minutes. Remove from heat.

Spread mayonnaise on the bottom bun and ketchup and/or mustard on the top bun as desired.

Toppings

Core and slice the tomato into 1/4-inch (6 mm) thick rounds. Pat the lettuce leaves dry. Thinly slice 1/4 of the red onion if using. Arrange dill pickle slices.

Assemble each burger: place the dressed bottom bun on a plate, add lettuce (1-2 leaves), then the rested patty (cheese-side up), then tomato slice(s), pickle slices (3 per burger), and onion if using. Add bacon or avocado if desired.

Top with the bun crown and gently press to compress slightly. Serve immediately.

Optional Add-ons

If using bacon, cook strips in a skillet over medium heat until crisp, about 6-8 minutes, turning occasionally. Drain on paper towel and add to burger during assembly. If using avocado, slice and fan onto the patty just before serving.
