Seafood Preparation

Prepare the Oysters

Shuck the oysters carefully and place them on a bed of crushed ice on a serving platter.

Cook the Shrimp

Bring a pot of salted water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink. Drain and place in ice water to stop the cooking process. Peel and devein the shrimp.

Prepare the Yellowfin Tuna

Cut the yellowfin tuna into thin slices or cubes. Optionally marinate in soy sauce and sesame oil for 15 minutes.

Cook the Maine Lobster

Bring a large pot of salted water to a boil. Add the lobsters and cook for 8-10 minutes. Remove from the pot and let them cool. Crack the shells and remove the meat, keeping it whole if possible.

Prepare the Crab Cocktail

Combine the crab meat with a little lemon juice and season with salt and pepper. Chill before serving.

Ceviche

If using store-bought ceviche, ensure it is well chilled. If making from scratch, marinate diced fish in lime juice with chopped onions, cilantro, and tomatoes for at least 30 minutes.

Assemble the Seafood Tower

On a large serving platter, create layers starting with the oysters, followed by the shrimp, ceviche, yellowfin tuna, crab cocktail, and lobster. Arrange them in a visually appealing manner.

Garnish and Serve

Garnish the seafood tower with fresh parsley and lemon wedges. Serve with cocktail sauce and hot sauce on the side for dipping.
