In a fermentation vessel, combine the crushed grapes with water and add the natural yeast. Stir gently to mix. Cover with a cloth and let it ferment for about 7-10 days at room temperature.

After the initial fermentation period, add the orange zest and sugar to the mixture. Stir well to dissolve the sugar completely.
