Prepare the Octopus

Bring a large pot of salted water to a boil. Add the octopus and simmer for about 45 minutes or until tender. Remove from water and let cool.

Grill the Octopus

Preheat a grill or grill pan over medium-high heat. Cut the cooled octopus into tentacle pieces. Brush with olive oil and season with salt. Grill for about 2-3 minutes on each side until charred and crispy.

Prepare the Crispy Potatoes

While the octopus is grilling, peel and cut the potatoes into bite-sized pieces. Heat olive oil in a frying pan over medium heat. Fry the potatoes until golden and crispy. Drain on paper towels and season with salt.

Serve

On a plate, arrange the grilled octopus alongside the crispy potatoes. Drizzle with romesco sauce and garnish with lemon wedges and fresh parsley.
