Method
Blackened Ahi
Prepare the Ahi
Rub the Ahi tuna steaks with olive oil and coat them evenly with blackening seasoning.
Cook the Ahi
Heat a skillet over high heat and sear the tuna for 2-3 minutes on each side for medium-rare. Serve with lime wedges.
Mongolian Spiced Baby Ribs
Prepare the Marinade
In a bowl, mix soy sauce, brown sugar, ginger, garlic, and black pepper.
Marinate the Ribs
Place the ribs in a large resealable bag and pour the marinade over them. Seal and refrigerate for at least 2 hours or overnight.
Cook the Ribs
Preheat the oven to 300°F (150°C). Place the ribs on a baking sheet and cover with foil. Bake for 2.5 to 3 hours. Finish on the grill for a charred effect.
Crispy Yuzu Dusted Wings
Prepare the Wings
Pat the chicken wings dry and season with salt and pepper.
Coat the Wings
Dredge the wings in cornstarch until evenly coated.
Fry the Wings
Fry the wings in hot oil until crispy and golden brown, about 8-10 minutes. Drizzle with yuzu juice before serving.
Yukari Musubi
Cook the Rice
Rinse sushi rice until water runs clear. Combine rice and water in a rice cooker and cook according to the manufacturer's instructions.
Season the Rice
Once cooked, mix the rice with yukari seasoning and let it cool slightly.
Assemble the Musubi
Place a portion of rice on a nori sheet, mold into the desired shape, and wrap the nori around the rice. Repeat until all rice is used.
Namasu
Make the Dressing
In a small bowl, whisk together rice vinegar, sugar, and salt until dissolved.
Combine and Serve
Pour the dressing over the vegetables and toss to coat. Let sit for 10 minutes before serving.
