Prepare the Ribs

Preheat your oven to 300°F (150°C). Rinse the baby back ribs under cold water and pat them dry with paper towels.

Make the Marinade

In a bowl, combine soy sauce, honey, rice vinegar, minced garlic, grated ginger, and chili paste. Mix well.

Season the Ribs

Rub the Szechuan peppercorns over the ribs, then pour half of the marinade over the ribs, making sure they are well coated. Let it marinate for at least 30 minutes (or overnight in the refrigerator for best results).

Bake the Ribs

Place the marinated ribs on a baking sheet lined with aluminum foil. Cover the ribs with another piece of foil and bake for 2.5 to 3 hours or until the meat is tender.

Grill for Finish

Preheat the grill to medium-high heat. Remove the ribs from the oven and discard the foil. Brush the remaining marinade over the ribs and grill for about 5-7 minutes, turning occasionally, until slightly charred.
