Prepare the Ingredients

Chop the onion, garlic, and bell pepper. Slice the Portuguese sausage and chorizo into bite-sized pieces.

In a large paella pan or deep skillet, heat olive oil over medium heat. Add the chopped onion, garlic, and bell pepper and sauté until soft and translucent.

Stir in the sliced Portuguese sausage and chorizo, cooking until they start to brown.
