Sauté the Base
In a large paella pan or deep skillet, heat olive oil over medium heat. Add the chopped onion, garlic, and bell pepper and sauté until soft and translucent.
Add the Sausages
Stir in the sliced Portuguese sausage and chorizo, cooking until they start to brown.
Incorporate the Rice
Add the paella rice to the pan and stir for a couple of minutes, allowing it to soak up the flavors.
Add Liquid and Flavorings
Mix in the chicken broth, tomato paste, paprika, and saffron. Season with salt and black pepper to taste.
Add Seafood
Once the broth is boiling, reduce the heat to a simmer and add the lobster, shrimp, and clams. Cover the pan and let it cook for about 15-20 minutes, or until the seafood is cooked and the rice is tender.
Garnish and Serve
Remove from heat, garnish with parsley, and serve hot.
