Prepare the Base
In a large paella pan or skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, sautéing until softened, about 5 minutes. Stir in the minced garlic and paprika, cooking for another minute.
Add Chorizo and Rice
Add the Spanish chorizo to the pan and cook for 3-4 minutes until it starts to brown. Stir in the Arborio rice and saffron threads, coating the rice with the oil and spices.
Combine Liquids
Pour in the dry white wine and cook until mostly evaporated. Then, add the chicken broth and bring to a boil. Season with salt and black pepper.
Cook the Rice
Reduce the heat to low and let it simmer for about 15 minutes without stirring, allowing the rice to absorb the liquid.
Add Seafood
After 15 minutes, gently nestle the shrimp, clams, and lobster into the rice. Cover and cook for an additional 10 minutes, or until the clams open and the shrimp are cooked through.
Finish with Peas
Stir in the frozen green peas and cook for another 2-3 minutes. Remove from heat and let sit for 5 minutes before serving.
