Soup Preparation

Cook the Vegetables

In a pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until onion becomes translucent.

Add Sweet Potatoes

Peel and cube the Okinawan sweet potatoes. Add them to the pot and stir for a few minutes.

Simmer the Soup

Pour in the vegetable broth and coconut milk. Add kaffir lime leaves, salt, and black pepper. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until sweet potatoes are tender.

Blend the Soup

Remove the kaffir lime leaves and blend the soup using an immersion blender or in batches until smooth.

Mix the Ingredients

In a bowl, combine goat cheese, sour cream, lemon juice, chopped chives, salt, and black pepper. Mix until smooth and creamy.
