Prepare the Marinade

In a bowl, mix together soy sauce, brown sugar, rice vinegar, minced garlic, grated ginger, and chili paste until well combined. Adjust seasoning with salt and pepper to taste.

Marinate the Ribs

Place the pork back ribs in a large resealable bag or a shallow dish. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

Preheat the Grill

Preheat your grill to medium heat. If using a charcoal grill, prepare the coals for indirect grilling.

Grill the Ribs

Remove the ribs from the marinade and let excess marinade drip off. Place the ribs on the grill and cook for about 2 hours, turning occasionally and basting with the reserved marinade, until the ribs are tender and caramelized.

Garnish and Serve

Once cooked, remove the ribs from the grill and let them rest for a few minutes. Sprinkle chopped chives and toasted sesame seeds on top before serving.
