Brisket

Method

Preparation of Brisket

1

Prepare the Rub

In a small bowl, combine the coarse sea salt, black pepper, garlic powder, onion powder, paprika, and brown sugar. Mix well.

2

Season the Brisket

Rub the spice mixture all over the brisket, ensuring it's evenly coated. Drizzle the liquid smoke over the meat for added flavor.

3

Preheat Smoker

Preheat your smoker to 225°F (107°C). Soak the mesquite wood chips in water for at least 30 minutes before using.

4

Smoke the Brisket

Place the brisket in the smoker and add the drained mesquite wood chips to the smoker box. Smoke for about 1 hour per pound, or until the internal temperature reaches 195°F (90°C) for tender slices.

Cooking Sides

5

Cook Corn on the Cob

Boil water in a large pot and add the corn on the cob. Cook for about 8-10 minutes until tender. Drain and serve with butter and salt.

6

Heat Baked Beans

Open the can of baked beans and heat them in a saucepan over medium heat until warmed through.

7

Prepare Mochiko Corn Bread

Follow the package instructions for preparing the Mochiko Corn Bread. Bake until golden brown and a toothpick inserted comes out clean.

8

Serve with BBQ Sauce

Serve the brisket sliced with Paniolo BBQ sauce on the side for dipping.
