Preparing the Pork Ribs

Season and Marinate

Preheat your oven to 150°C (300°F). Season the pork ribs with salt, black pepper, and garlic powder. Allow them to marinate for at least 30 minutes.

Make the Ko Chu Jang Glaze

In a bowl, mix together the Ko Chu Jang, honey, soy sauce, and rice vinegar until well combined.

Bake the Ribs

Place the ribs on a baking sheet and brush them generously with the Ko Chu Jang glaze. Cover with aluminum foil and bake for 2 hours.

Glaze and Broil

After 2 hours, remove the foil and brush more glaze on the ribs. Increase the oven temperature to 220°C (425°F) and broil for an additional 10-15 minutes until caramelized.

Making the Yuzu Kosho Tartar

Prepare the Tartar

In a bowl, combine the mayonnaise, yuzu kosho, green onions, and lemon juice. Season with salt to taste and mix well.

Serving

Serve the Dish

Remove the ribs from the oven and let them rest for 5 minutes. Cut into portions, serve with the yuzu kosho tartar on the side, and garnish with sesame seeds and chopped cilantro.
