Asian Tartar Sauce
Method
Preparing the Chips
Cut and Soak Potatoes
Peel and cut the Russet potatoes into thick strips. Soak them in cold water for at least 30 minutes to remove excess starch.
Preparing the Fish
Prepare the Batter
In a mixing bowl, combine flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the cold beer (or sparkling water) until the batter is smooth.
Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off. Carefully place the fillets in the hot oil and fry until golden brown, about 4-5 minutes. Remove and drain on paper towels.
Making the Asian Tartar Sauce
Mix Ingredients
In a bowl, combine the mayonnaise, soy sauce, rice vinegar, Dijon mustard, chopped green onions, sesame oil, and Sriracha (if using). Stir until well mixed and creamy.
Serving
Plate and Serve
Serve the crispy fish and chips hot with a side of the Asian tartar sauce for dipping.
